Tomato Ring Eggs

An easy warm breakfast meal. This recipe is quite a tasty way to start the day and relatively easy to prepare. Microwaves vary, so you may need longer to cook the eggs fully. Honestly, it may be worthwhile to just pour the egg mixture into the tomato rings, cooking them in a pan on the stovetop. Nevertheless, this earns a respectable 3 out of 5 stars.
Ingredients:
1 tomato
shredded mozzarella cheese
2 eggs
Protein Options: diced mushrooms or sausage crumbles
Directions:
Cut off the top and bottom of the tomato, and then cut horizontally into thirds
Remove the innards of the tomato by pressing a cup through the middle of the tomato. The circumference of the lip of the cup should fit within the circumference of the tomato, leaving a ring intact.
In a separate bowl, mix the tomato innards with two eggs and a pinch of salt and pepper.
Put the tomato rings on a microwave-safe plate and scoop the tomato/egg mixture into the center of each tomato ring.
Top each ring with the desired amount of your preferred type of cheese.
Place the microwave-safe plate with tomato rings in the microwave and cook for 2 minutes.
Check that the eggs have fully cooked through; if not, continue heating in the microwave in 30-second intervals until fully cooked.
Once the eggs are fully cooked through and the cheese is melted, let them cool for 1 minute and then enjoy!
